    Zucchini Rice Casserole

    List of Ingredients


    • 1/2 teaspoon salt
    • 1/2 cup rice
    • 1 onion, chopped
    • 1 pound zucchini (3 to 4 medium)
    • 1/2 green pepper
    • 1 (8 ounce) can tomato sauce
    • 2/3 cup shredded cheese
    • 1/4 cup parmesan cheese


    Instructions


    1. Boil 1 cup water with 1/4 teaspoon salt. Add rice and onion; reduce heat, cover and simmer until rice is tender (about 20 minutes). Wash zucchini and cut into 1/2" slices. Boil 1/2 cup water with 1/4 teaspoon salt. Add zucchini and green pepper; cook about 5 minutes until zucchini is tender. Remove from heat and drain.
    2. Add tomato sauce and zucchini mixture to rice and lightly mix. Place in 1 1/2 quart casserole dish and top with mix cheeses. Bake uncovered 20 minutes at 350 degrees.
    3. For complete meal, add 1/2 to 1 pound browned beef. Also add, pinch of mint, allspice, cinnamon, garlic, salt and pepper.
