Zucchini Rice Casserole

- 1/2 teaspoon salt
- 1/2 cup rice
- 1 onion, chopped
- 1 pound zucchini (3 to 4 medium)
- 1/2 green pepper
- 1 (8 ounce) can tomato sauce
- 2/3 cup shredded cheese
- 1/4 cup parmesan cheese
Instructions
- Boil 1 cup water with 1/4 teaspoon salt. Add rice and onion; reduce heat, cover and simmer until rice is tender (about 20 minutes). Wash zucchini and cut into 1/2" slices. Boil 1/2 cup water with 1/4 teaspoon salt. Add zucchini and green pepper; cook about 5 minutes until zucchini is tender. Remove from heat and drain.
- Add tomato sauce and zucchini mixture to rice and lightly mix. Place in 1 1/2 quart casserole dish and top with mix cheeses. Bake uncovered 20 minutes at 350 degrees.
- For complete meal, add 1/2 to 1 pound browned beef. Also add, pinch of mint, allspice, cinnamon, garlic, salt and pepper.
