- 2 pounds chicken parts
- Salt and pepper
- 1 clove garlic, crushed
- 1 teaspoon oregano
- 2 tablespoons oil
- 1 chorizo (hot spanish sausage), sliced
- 1 onion, chopped
- 1 green pepper, seeded and chopped
- 1 cup uncooked rice
- 2 1/2 cups beef broth
- 8-ounce can tomato sauce
- 1/2 teaspoon saffron
- 1/4 pound cooked, cleaned shrimp
- 1/4 pound cooked lobster
- 1/2 cup cooked peas
Instructions
- Wash and dry chicken parts. Rub with salt, pepper, garlic and oregano. Brown chicken in oil in a large skillet. Add chorizo, onion and green pepper; cook over low heat for 10 minutes. Stir in beef broth, tomato sauce and saffron; cover and simmer 20 minutes. Stir in rice; cover and simmer 30 minutes longer. Add shrimp, lobster and peas; heat through. Allow any excess liquid to cook off, and serve.
