    • 4 (11 ounce) cans shoepeg corn, drained
    • 3 plum tomatoes, seeded and chopped
    • 1/2 cup thinly sliced green onions
    • 1/2 cup chopped green pepper
    • 1/2 cup mayonnaise
    • Salt and pepper, to taste


    Instructions


    1. In a bowl, combine all ingredients; mix well. Cover and refrigerate for atleast 1 hour.
    2. Yield: 6 to 8 servings
