- 4 (11 ounce) cans shoepeg corn, drained
- 3 plum tomatoes, seeded and chopped
- 1/2 cup thinly sliced green onions
- 1/2 cup chopped green pepper
- 1/2 cup mayonnaise
- Salt and pepper, to taste
Instructions
- In a bowl, combine all ingredients; mix well. Cover and refrigerate for atleast 1 hour.
- Yield: 6 to 8 servings
