    Barbecue Beef Sandwiches

    List of Ingredients


    • 3 pounds boneless chuck roast
    • 1 cup barbecue sauce
    • 1/2 cup apricot preserves
    • 2 tablespoons red or green bell pepper chopped
    • 1 tablespoon dijon mustard
    • 2 teaspoons brown sugar, packed
    • 1 small onion sliced
    • 12 whole hamburger buns or kaiser rolls split


    Instructions


    1. Remove excess fat from beef.
    2. Cut beef into 4 pieces.
    3. Place beef in 4 or 5 quart slow cooker.
    4. Mix remaining ingredients except buns; pour over beef.
    5. Cover and cook on low heat setting 7 to 8 hours or until beef is tender.
    6. Remove beef from slow cooker.
    7. Cut beef into thin slices; stir back into sauce.
    8. Cover and cook on low setting 20 to 30 minutes longer or until beef is hot.
    9. Per serving (1 sandwich)
