Chicken Salad To Die For

List of Ingredients
- Dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 heaping tablespoon dijon mustard
- 1 teaspoon sugar, optional
- 1/4 teaspoon salt
- 1/4 heaping teaspoon black pepper
- 2 1/2 teaspoons lemon juice
- Filling:
- 1 1/2 cups shredded cooked chicken
- 1/2 cup finely chopped celery
- 2 tablespoons finely chopped green onions
- 1/4 cup chopped toasted pecans
- Dressing from above
Instructions
- Combine dressing ingredients, mix well and store refrigerated. Combine all ingredients and chill atleast two hours, but preferably 4 to 6 hours before serving.
- For each sandwich: 1 thick slice sweet dark whole grain bread (or your favortite), 1/2 cup chicken salad, 3 slices crisp cooked bacon and 1 thick slice provolone or white american cheese.
- Spread bread with chicken salad; run under the broiler for about a minute until heated, but not bubbly. Remove from broiler and place bacon and cheese on top. Return to broiler just long enough to melt the cheese and serve immediately.
