    Fruited Chicken Salad Pitas

    List of Ingredients


    • 1/3 cup fat free mayonnaise
    • 1/4 teaspoon salt
    • 2 1/2 cups chopped cooked chicken breast
    • 1 cup halved red seedless grapes
    • 1 1/2 tablespoons chopped pecans toasted
    • 1 (11 ounce) can mandarin oranges, drained
    • 6 small green leaf lettuce leaves
    • 3 (6 inch) whole wheat pita bread rounds cut in half crosswise


    Instructions


    1. Combine first 5 ingredients in a medium bowl, stirring well.
    2. Gently stir in oranges.
    3. Place 1 lettuce leaf in each pita pocket half.
    4. Spoon 3/4 cup chicken salad into each pita half.
    5. Yield: 6 servings at 208 calories each.
      Serving Size: 1 pita half
