    Gaudrey's Bacon And Egg Salad Sandwiches

    List of Ingredients


    • 8 boiled eggs, peeled and grated or finely chopped
    • 4 strips bacon, cooked very crisp and finely crumbled
    • 1/3 cup mayonnaise
    • 1/8 teaspoon black pepper
    • 1/4 teaspoon prepared mustard
    • 1 tablespoon dill pickle vinegar
    • 2 teaspoons grated onion
    • 1 cup finely shredded cheddar cheese


    Instructions


    1. Combine all ingredients, adding more mayonnaise if needed to make spreading consistency. Remove crusts from bread if desired and spread with mixture. If desired, you may serve theses cut in strips open faced style, as regular closed sandwiches, as wraps, or in croissants. It's even good on crackers.
