Gourmet Alfrado Sauce

- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 tablespoon chopped garlic
- 3 cups 1% milk
- 4 ounces neufchatel cheese
- 3/4 cup shredded parmesan cheese (a parmesan/ romano blend tastes great)
- 1 teaspoon ground pepper
Instructions
- Melt butter in medium saucepan over medium high heat. Add garlic and saute for 1 minute. Stir in flour to form paste. Slowly whisk in milk. Continue whisking until mixture thickens, 5 to 7 minutes. Add ground pepper, parmesan and neufchatel cheese (cut into chunks) and continue stirring until completely melted.
- Great tossed with whole wheat pasta, chopped cooked chicken breast, and chopped steamed veggies. Or, pour over grilled chicken breasts, use as a white pizza sauce, pour over baked potato or veggies...the sky's the limit!
