    Vegetable Spaghetti Sauce

    List of Ingredients


    • 1 tablespoon olive oil
    • 3 cups finely chopped zucchini (3 medium)
    • 1 cup chopped onion
    • 1/2 cup finely chopped carrot (1 medium)
    • 2 cloves garlic, minced
    • 1 (28 ounce) can tomatoes
    • 1 (7.5 ounce) can tomato sauce
    • 1 (10 ounce) jar mushroom stems and pieces
    • 2 teaspoons dried oregano
    • 1 1/2 teaspoon dried basil
    • 1 teaspoon salt
    • 1/4 teaspoon pepper


    Instructions


    1. In a large saucepan, heat oil over medium high heat.

    2. Add zucchini, onion, carrot and garlic.

    3. Cook for 10 minutes or until onions are tender; stir frequently.

    4. Break up tomatoes.

    5. Add tomatoes and liquid, tomato sauce, mushrooms and liquid and seasonings.

    6. Cover and simmer 2 hours or until sauce has thickend; stir occasionally.

    7. Makes 6 servings. Each serving 1 cup.
