Vegetable Spaghetti Sauce

- 1 tablespoon olive oil
- 3 cups finely chopped zucchini (3 medium)
- 1 cup chopped onion
- 1/2 cup finely chopped carrot (1 medium)
- 2 cloves garlic, minced
- 1 (28 ounce) can tomatoes
- 1 (7.5 ounce) can tomato sauce
- 1 (10 ounce) jar mushroom stems and pieces
- 2 teaspoons dried oregano
- 1 1/2 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a large saucepan, heat oil over medium high heat.
- Add zucchini, onion, carrot and garlic.
- Cook for 10 minutes or until onions are tender; stir frequently.
- Break up tomatoes.
- Add tomatoes and liquid, tomato sauce, mushrooms and liquid and seasonings.
- Cover and simmer 2 hours or until sauce has thickend; stir occasionally.
- Makes 6 servings. Each serving 1 cup.
