    List of Ingredients


    • 1 (46 ounce) can V8 juice
    • 1 (14 1/2 ounce) can diced tomatoes
    • 6 medium stalks of celery (about 1 cup)
    • 1/2 of a medium cabbage, red or green (about 6 cups)
    • 1 medium onion (about 1 cup)
    • 6 medium carrots (or pre sliced to equal 1 1/2 cups)
    • 2 medium green bell peppers (red or yellow can be used) (about 2 cups)
    • 1 envelope lipton beefy onion soup mix
    • 1 (14 ounce) can Swanson low sodium beef broth
    • 1 beef bouillon cube or package
    • 1 teaspoon garlic powder
    • 1/2 teaspoon black pepper


    Instructions


    1. Chop and dice all veggies.
    2. Add all ingredients into a large stockpot.
    3. Add water if necessary to bring liquid to almost twice the depth of veggies in the pot.
    4. Bring to a boil and stir as needed.
    5. Cook oon low heat for about 2 hours or until all veggies are soft.
    6. Other seasonings such as curry powder, parsley or any other herbs to suit your taste.
    7. 50 calories per 1 cup serving.
