Cabbage Soup

List of Ingredients
- 1 (46 ounce) can V8 juice
- 1 (14 1/2 ounce) can diced tomatoes
- 6 medium stalks of celery (about 1 cup)
- 1/2 of a medium cabbage, red or green (about 6 cups)
- 1 medium onion (about 1 cup)
- 6 medium carrots (or pre sliced to equal 1 1/2 cups)
- 2 medium green bell peppers (red or yellow can be used) (about 2 cups)
- 1 envelope lipton beefy onion soup mix
- 1 (14 ounce) can Swanson low sodium beef broth
- 1 beef bouillon cube or package
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Chop and dice all veggies.
- Add all ingredients into a large stockpot.
- Add water if necessary to bring liquid to almost twice the depth of veggies in the pot.
- Bring to a boil and stir as needed.
- Cook oon low heat for about 2 hours or until all veggies are soft.
- Other seasonings such as curry powder, parsley or any other herbs to suit your taste.
- 50 calories per 1 cup serving.
