    • 1 1/4 pound boneless skinless chicken breast cut into 1" pieces
    • 3 tablespoons flour seasoned with 1/2 tsp. salt, 1/4 tsp. pepper and 1/8 tsp. garlic powder
    • 2 teaspoons oil
    • 1 medium onion chopped
    • 3 carrots sliced into rounds
    • 3 celery stalks sliced
    • 2 bay leaves
    • 1 teaspoon parsley
    • 5 cups fat free chicken broth
    • 1 cup frozen green peas thawed
    • Dumplings
    • 1/3 cup self rising flour
    • 1/4 cup milk


    Instructions


    1. Sprinkle chicken with 1 tablespoon of seasoned flour.
    2. In a large skillet heat oil and lightly brown chicken. Remove from pan.
    3. In same skillet, add onions, carrots and celery. Cook until vegetables soften.
    4. Add bay leaves and parsley and stir in remaining seasoned flour.
    5. Pour in chicken broth and return chicken to skillet.
    6. Bring to a boil; reduce heat and simmer about 5 to 7 minutes.
    7. Meanwhile, mix dumplings.
    8. Drop mixture with teaspoon into skillet.
    9. Simmer, covered, about 6 to 8 minutes.
    10. Add peas and cook another 5 minutes.
    11. Makes 6 1 cup servings at 4 points each.
