- 1 1/4 pound boneless skinless chicken breast cut into 1" pieces
- 3 tablespoons flour seasoned with 1/2 tsp. salt, 1/4 tsp. pepper and 1/8 tsp. garlic powder
- 2 teaspoons oil
- 1 medium onion chopped
- 3 carrots sliced into rounds
- 3 celery stalks sliced
- 2 bay leaves
- 1 teaspoon parsley
- 5 cups fat free chicken broth
- 1 cup frozen green peas thawed
- Dumplings
- 1/3 cup self rising flour
- 1/4 cup milk
Instructions
- Sprinkle chicken with 1 tablespoon of seasoned flour.
- In a large skillet heat oil and lightly brown chicken. Remove from pan.
- In same skillet, add onions, carrots and celery. Cook until vegetables soften.
- Add bay leaves and parsley and stir in remaining seasoned flour.
- Pour in chicken broth and return chicken to skillet.
- Bring to a boil; reduce heat and simmer about 5 to 7 minutes.
- Meanwhile, mix dumplings.
- Drop mixture with teaspoon into skillet.
- Simmer, covered, about 6 to 8 minutes.
- Add peas and cook another 5 minutes.
- Makes 6 1 cup servings at 4 points each.
