    Chicken And Salsa Soup

    List of Ingredients


    • 1 3/4 cups water
    • 1 can reduced sodium chicken broth
    • 1/2 pound boneless skinless chicken breast cut up into bite size pieces
    • 1 to 2 teaspoons chili powder
    • 1 can kernel corn with sweet peppers, drained
    • 1 cup chunky garden style salsa
    • 3 cups broken tortilla chips
    • 2 ounces pepper jack cheese, shredded


    Instructions


    1. In a saucepan, combine water, chicken broth, chicken and chili powder.
    2. Bring to boiling and reduce heat.
    3. Cover and simmer for 8 minutes.
    4. Add corn, simmer uncovered for 5 minutes.
    5. Stir in salsa and heat through.
    6. To serve, ladle soup into bowls, top with broken chips and sprinkle with cheese.
