Hearty Italian Minestroni

List of Ingredients
- 7 cups water
- 2 1/2 tablespoons beef flavored bouillon
- 2 cups coarsely chopped cabbage
- 1 (14 1/2 ounce) can diced tomatoes with basil garlic and oregano
- 1 onion, chopped
- 1 carrot halved lengthwise and sliced
- 1 tablespoon Italian seasoning
- 1 1/2 cups frozen french style green beans
- 1 zucchini halved lengthwise and cut into chunks
- 1/2 cup small shell pasta
- 1 (15 ounce) can kidney beans
- 1 cup sliced pepperoni, quartered
- Garlic, salt and pepper, to taste
Instructions
- In a large pot, combine first 7 ingredients. Bring to a boil. Reduce heat to low and simmer partially covered 20 minutes. Add green beans, zucchini and pasta. Simmer, uncovered for 15 minutes or until veggies and pasta are tender. Stir in kidney beans and pepperoni, heat through. Season to taste with garlic, salt and pepper.
