    • 4 ounces diced sausage, ham or bacon
    • 1 cup diced onion
    • 1/2 cup diced celery
    • 2 garlic cloves, minced
    • 2 cups chicken broth
    • 4 ounces black eyed peas, picked over and rinsed
    • 1 bay leaf
    • 4 ounces long grain white rice
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon pepper
    • 1/4 cup chopped green onions
    • 2 tablespoons minced parsley


    Instructions


    1. Spray medium saucepan with cooking spray. Add sausage, if using; cook over medium heat, stirring occasionally, 3 minutes until lightly browned. Add onion and celery; cook, stirring until onion is golden. Add garlic; cook, stirring 1 minute more.
    2. Add broth, black eyed peas, bay leaf and 2 cups water, bring to a boil. Reduce heat, cover and simmer 1 hour, until peas are soft but not mushy. Add rice, thyme and pepper; cover and simmer 15 to 20 minutes until rice is just tender.
    3. Remove from heat; let stand 10 minutes, covered. Sprinkle with scallions and parsley and serve.
