Jim's Barnyard Chili

List of Ingredients
- 1 1/2 pounds lean beef stew meat, cut into small chunks
- 1 1/2 pounds lean pork stew meat, cut into small chunks
- 1 medium to large diced onion
- 2 heaping teaspoons minced garlic
- 2 to 3 tablespoons canola oil
- 1 (14 1/2 ounce) can beef broth
- 2 (10 ounce) cans diced tomatoes with green chiles
- 2 (16 ounce) cans chili beans
- 1 (.87 ounce) envelope brown gravy mix
- 1 (.87 ounce) envelope pork gravy mix
- 1/4 teaspoon ground cumin
- 4 teaspoons chili powder
- 1 to 2 teaspoons red pepper flakes, for heat (optional)
Instructions
- In a cast iron dutch oven, add canola oil. Heat up, then add stew meats, onion and garlic. Cook until almost done. Then add remaining ingredients. Bring to a boil and then turn down to simmer for 3 to 4 hours, stirring occasionally. After it's almost dine, taste. Then decide if you need to add salt and pepper. It's really great served with cornbread.
