Kielbasa Cabbage Soup

List of Ingredients
- 1 small cabbage, coarsely chopped
- 1 medium onion, chopped
- 6 garlic cloves, minced
- 2 teaspoons olive oil
- 4 cups water
- 3 teaspoons cider vinegar
- 2 tablespoons brown sugar
- 1 pound Kielbasa, cut into 1/2" pieces and halved
- 4 medium potatoes, peeled and cubed
- 3 large carrots, diced
- Salt to taste
- 1/4 teaspoon pepper
Instructions
- In a dutch oven, saute cabbage, onion and garlic in oil about 5 minutes, or until tender.
- Add remaining ingredients.
- Bring to a boil.
- Reduce heat and simmer about 1 hour or until vegetables are tender.
