    Kielbasa Cabbage Soup

    • 1 small cabbage, coarsely chopped
    • 1 medium onion, chopped
    • 6 garlic cloves, minced
    • 2 teaspoons olive oil
    • 4 cups water
    • 3 teaspoons cider vinegar
    • 2 tablespoons brown sugar
    • 1 pound Kielbasa, cut into 1/2" pieces and halved
    • 4 medium potatoes, peeled and cubed
    • 3 large carrots, diced
    • Salt to taste
    • 1/4 teaspoon pepper


    Instructions


    1. In a dutch oven, saute cabbage, onion and garlic in oil about 5 minutes, or until tender.
    2. Add remaining ingredients.
    3. Bring to a boil.
    4. Reduce heat and simmer about 1 hour or until vegetables are tender.
