    • 2 tablespoons butter
    • 1 pound polish sausage
    • 1 cup chopped onion
    • 2 cups chopped celery and leaves
    • 4 cups shredded cabbage
    • 2 cups sliced carrots
    • 1 bay leaf
    • 1/2 teaspoon thyme
    • 2 tablespoon vinegar
    • 1 tablespoon salt
    • 1 1/2 cups beef bouillon
    • 5 cups water
    • 3 cups cubed potatoes


    Instructions


    1. Melt butter in skillet. Add sliced and quartered sausage, onion and celery. Cook until tender. Transfer to a Dutch oven. Add remaining ingredients. Cover and cook for 1 1/2 hours or until vegetables are done.
    2. Yield: 8 to 9 servings
