Salsa Soup

- 2 tablespoons vegetable oil
- 1 pound sweet Italian sausage
- 1 teaspoon pepper seasoning
- Salt and pepper to taste
- 1 cup chopped onions
- 1 cup sliced celery
- 1 cup diced carrots
- 3 cloves garlic, minced
- 1 quart low sodium chicken broth
- 1 (16 ounce) jar salsa, hot or mild
- 2 small zucchini, quartered then sliced crosswise 1/2 inch thick
Instructions
- Heat oil in saucepan over medium heat. Add Italian sausage and cook, stirring occasionally, until done. Using a slotted spoon, transfer to a bowl.
- In same pan, saute onion, celery, carrots and garlic 3 to 4 minutes. Add chicken broth and salsa; bring to a boil. Simmer 30 minutes, stirring occasionally. Stir in zucchini and sausage and simmer 8 to 10 minutes or until zucchini is tender.
- Yield: 4 to 6 servings
