    List of Ingredients


    • 2 tablespoons vegetable oil
    • 1 pound sweet Italian sausage
    • 1 teaspoon pepper seasoning
    • Salt and pepper to taste
    • 1 cup chopped onions
    • 1 cup sliced celery
    • 1 cup diced carrots
    • 3 cloves garlic, minced
    • 1 quart low sodium chicken broth
    • 1 (16 ounce) jar salsa, hot or mild
    • 2 small zucchini, quartered then sliced crosswise 1/2 inch thick


    Instructions


    1. Heat oil in saucepan over medium heat. Add Italian sausage and cook, stirring occasionally, until done. Using a slotted spoon, transfer to a bowl.
    2. In same pan, saute onion, celery, carrots and garlic 3 to 4 minutes. Add chicken broth and salsa; bring to a boil. Simmer 30 minutes, stirring occasionally. Stir in zucchini and sausage and simmer 8 to 10 minutes or until zucchini is tender.
    3. Yield: 4 to 6 servings
