Southwestern Chicken And White Bean Soup

List of Ingredients
- 1 pound boneless chicken breasts, cubed
- 3/4 cup chopped onion
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 (14 ounce) can chicken broth
- 1 cup chunky salsa
- 1 (15 ounce) can navy beans, rinsed and drained
- 1 cup frozen whole kernel corn
Instructions
- Spray stock pot with nonstick cooking spray.
- Heat 1 minute.
- Add chicken and cook until browned, stirring often.
- Add onion, garlic and cumin; cook until onion is tender.
- Add broth, salsa, beans and corn; heat to boiling.
- Cover and cook over low heat for 20 minutes.
- Yield: 6 servings
