    List of Ingredients


    • 1 pound great northern beans
    • 6 cups water
    • 6 cups chicken broth
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 2 (4 ounce) cans diced green chiles
    • 1 tablespoon dried oregano, crushed
    • 1 tablespoon ground cumin
    • 1/2 teaspoon ground red pepper
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 4 cups chopped cooked chicken
    • 1/2 cup Monterey jack cheese
    • Fresh chile peppers, sliced (optional)


    Instructions


    1. Rinse beans. Place in a dutch oven and add water. Bring to a boil. Reduce heat and simmer, uncovered 2 minutes. Remove from heat. Cover and let beans soak for 1 hour (or cover and soak the beans overnight). Drain off water. In the same dutch oven, combine the beans, broth, onion, garlic, chiles, oregano, cumin, red pepper, salt and pepper. Bring to boiling. Reduce heat, cover and simmer for 1 hour or more. Stir in chicken and simmer, covered, for 1/2 to 1 hour or more. Before serving, stir in the cheese just until melted. Serve with sliced chile peppers or additional cheese.
    2. Yield: 5 to 6 servings
