Bacon, Potatoes And Onions

- 2 to 4 slices chopped bacon
- 1 large sliced onion
- 2 pounds peeled, sliced potatoes
- Water
- Salt and freshly ground black pepper, to taste
- Chopped chives or parsley for garnish (optional)
Instructions
- Saute the bacon in a large heavy pot over medium heat until it begins to give some fat. Add the onion and saute until tender but not brown, about 5 minutes. Add the potatoes, salt, and pepper. Add water to a depth of about 1/2 inch. Simmer, tightly covered, over low heat for 1 hour, stirring occasionally and adding a little water if necessary to keep the potatoes from sticking to the bottom of the pot.
