    List of Ingredients


    • 5 cups coarsley chopped cabbage
    • 2 tablespoons margarine
    • 2 tablespoons flour
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 1 1/4 cups milk
    • 1/2 cup chopped yellow sweet pepper
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup chopped yellow onion
    • 4 cups prepared crumbled cornbread


    Instructions


    1. Preheat oven to 375 degrees. In a saucepan, cook cabbage, covered in a small amount of boiling, lightly salted water for 5 minutes; drain. In the same saucepan, melt margarine, stir in flour, salt and pepper. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Stir in yellow sweet pepper, cheese and onion. Stir until cheese is melted. Remove from heat. Place 3 cups of the cornbread in a 2 quart casserole. Top with cooked cabbage, sauce and the remaining 1 cup of cornbread. Bake uncovered for 30 to 35 minutes or until heated through.
    2. Yield: Makes 8 side dish servings
