    Candied Sweet Potatoes

    • 4 sweet potatoes, medium size
    • 1 stick butter, cut into small pats
    • 1 cup packed brown sugar
    • 1/4 cup orange juice
    • 1/2 teaspoon vanilla


    Instructions


    1. Preheat oven to 375 degrees. Cut sweet potatoes into 1/8ths lengthwise.
    2. In a large heavy frying pan or dutch oven, melt the butter and brown sugar together until bubbly. Add the orange juice and vanilla and stir until smooth. Add the cut up sweet potatoes and bring to a simmer over high heat, cover and simmer, stirring occasionally until sweet potatoes are tender and caramelized, about 20 minutes.
    3. Strain the potatoes out of the sauce and place them in a casserole dish. Return the sauce to the pan and if syrup is to thin, add a bit more brown sugar. Continue to cook the sauce until syrup is thickened, about another 10 to 15 minutes. Add 1/2 of the butter; stir and pour the syrup over the potatoes in the casserole dish and place in oven.
    4. Bake until potatoes are lightly browned and glazed, about 10 to 15 minutes. Remove from the oven and sprinkle the rest of the butter pats over the top of the potatoes, stirring gently to incorporate. Serve immediately.
