Cowboy Beans

- 1 pound dried pinto beans
- 2 1/2 cups cold water
- 1/2 pound bacon
- 1 medium onion, chopped
- 1/2 cup picante sauce
- 1 teaspoon salt
- 1 clove garlic, minced
- 1 (6 ounce) can tomato paste
Instructions
- Thoroughly wash and pick over the beans ( be sure to get out all those little pieces of gravel).
- Put beans in a mixing bowl.
- Drown them real good with cold water and let them soak overnight.
- In the morning, pour the beans and water into a well seasoned dutch iven and bring them to a good boil, then turn the heat down some.
- Put the lid on and simmer the beans for about an hour (this is a good time to have breakfast).
- After breakfast, stir all the other ingredients in and simmer them covered for about 3 hours, or until tender.
- Don't let them cook dry, so add more water if necessary.
- This should serve 8, but I'll let you in on a little cowboy secret. They are much better when served a day or so later.
