    List of Ingredients


    • 1 pound dried pinto beans
    • 2 1/2 cups cold water
    • 1/2 pound bacon
    • 1 medium onion, chopped
    • 1/2 cup picante sauce
    • 1 teaspoon salt
    • 1 clove garlic, minced
    • 1 (6 ounce) can tomato paste


    Instructions


    1. Thoroughly wash and pick over the beans ( be sure to get out all those little pieces of gravel).
    2. Put beans in a mixing bowl.
    3. Drown them real good with cold water and let them soak overnight.
    4. In the morning, pour the beans and water into a well seasoned dutch iven and bring them to a good boil, then turn the heat down some.
    5. Put the lid on and simmer the beans for about an hour (this is a good time to have breakfast).
    6. After breakfast, stir all the other ingredients in and simmer them covered for about 3 hours, or until tender.
    7. Don't let them cook dry, so add more water if necessary.
    8. This should serve 8, but I'll let you in on a little cowboy secret. They are much better when served a day or so later.
