- 2 cups frozen, thawed asparagus, cut into 1 inch pieces
- 8 ounces cooked fettuccine pasta
- 2 tablespoons chopped ,reduced sodium lean ham
- Sauce:
- 1 tablespoon vegetable oil
- 2 tablespoons all-purpose flour
- 2 cups skim milk
- 1/4 cup grated parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375 degrees. To prepare sauce, in a medium saucepan, heat oil over medium heat. Add flour; cook, stirring constantly, for 1 minute. Add milk; cook, stirring constantly, until mixture thickens, about 5 minutes. Add Parmesan, salt, and pepper; stir until smooth.
- In a medium bowl, combine asparagus, pasta, and ham. Mix well. Place pasta mixture in a medium shallow casserole. Pour sauce over top. Bake until heated through and top is golden, about 30 minutes. Serve immediately.
