Italian Garlic Mashed Potatoes

- 2 pounds small red skinned potatoes, boiled with skins on, about 15 minutes
- 2 tablespoons minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 cup Romano cheese
- 1/2 cup light butter, softened and cut into pieces
Instructions
- When potatoes are fork tender, drain and transfer to a large bowl. Immediately add butter, cheese, garlic, oregano and salt. Blend with an electric mixer (may leave lumpy for texture.
- Yield: 4 servings
