Potato Casserole

- 4 cups potatoes, peeled and cubed
- 1 (8 ounce) container sour cream
- 1 onion, chopped
- 1 (10 3/4 ounce) can cream of chicken soup
- 1 cup grated cheese, your choice
- 1/2 cup melted butter
- 1 roll of packaged Ritz crackers, crushed
Instructions
- Preheat oven to 350 degrees
- Cook potatoes 10 minutes or until tender, drain. Mix sour cream, onions, chicken soup and cheese with potatoes.
- Pour into a greased casserole dish. Cover and bake for 30 minutes. Just before serving, toss crackers with butter and sprinkle over top and brown under broiler.
