    • 2 large unpeeled baking potatoes (about 1 1/4 pounds)
    • Vegetable oil
    • 1 cup shredded cheddar or colby jack cheese
    • 6 bacon slices, crisply cooked, drained and crumbled
    • 1/3 cup green onion, sliced
    • 1/4 cup barbecue sauce


    Instructions


    1. Preheat oven to 450 degrees. Cut potatoes into 1/4 inch thick slices (with crinkle cutter, if you have one).
    2. Generously spray both sides of potato slices with oil; place on baking stone. Bake 20 minutes or until lightly browned; remove from oven.
    3. In a small bowl, combine cheese, bacon and green onion.
    4. With a pastry brush, generously brush potato slices with barbeque sauce; sprinkle with cheese mixture.
    5. Return potato slices to oven. Bake 3 to 5 minutes or until cheese is melted.
    6. Makes 24 rounds
