Cajun Fried Potatoes And Sausage

List of Ingredients
- 6 potatoes, peeled and sliced
- 2 teaspoons corn oil
- 1 pound andouille sausage, cut into 1/4 inch rounds
- 1/2 green pepper, seeded and diced
- 1/2 red bell pepper, seeded and diced
- 1/2 teaspoon seasoning salt
- 1/2 teaspoon ground black pepper
- 1 onion, peeled and sdiced
Instructions
- Place sliced potatoes in a large bowl of cold water and allow to sit for 10 minutes. Drain, rinse and replace water and allow to sit for an additional 10 minutes; drain.
- Heat oil in a large skillet over medium high heat. Add sausage to skillet and saute for about 2 minutes. Add potatoes, peppers, seasoning salt and pepper. Cover, lower heat to medium and continue to cool for about 10 minutes, stirring occasionally. Add onion and cool mixture until ingredients are tender, about 3 more minutes. Serve warm.
