    List of Ingredients


    • 1 1/2 pounds chicken tenders, cut into cubes
    • 1 tablespoon paprika
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 tablespoons oil
    • 1 onion, chopped
    • 1 green bell pepper, chopped
    • 1 yellow bell pepper, chopped
    • 1 red bell pepper, chopped
    • 1 clove garlic, chopped
    • 1 (10 ounce) can rotel tomatoes
    • 1 1/2 cups instant rice
    • 1 cup monterey jack cheese
    • 1 (14 1/2 ounce) can chicken broth


    Instructions


    1. Roll chicken pieces in paprika, salt, and pepper. Chicken should be well coated. Add more paprika if you need to. Place oil in wok at 325 to 350 degrees. Add chicken. Cook 2 minutes or until chicken is browned. Add onion, chopped bell peppers, and garlic. Cook 4 minutes, drain off grease if necessary. Add rotel, 1 can of chicken broth plus 1 can (same size) of water. Stir in rice. Bring to boil, cover and remove from heat. Let stand 5 minutes. Sprinkle with more paprika and add cheese to top.


    Final Comments


    You can go 2 ways: Serve with tortillas, chips and salsa, or serve with a tossed salad and crusty garlic bread.
