    List of Ingredients


    • 2 1/4 cups (9 ounces) elbow macaroni, uncooked
    • 1 (14 ounce) package Healthy Choice low fat smoked sausage
    • 1 cup chopped onion
    • 1/2 cup sliced celery
    • 1/2 cup chopped green pepper
    • 1 1/2 teaspoons vegetable oil
    • 1 (14 1/2 ounce) can no salt added stewed tomatoes, undrained and chopped
    • 1 teaspoon chili powder
    • 1/4 teaspoon ground pepper
    • 1/2 cup (2 ounces) Healthy Choice fat free cheddar cheese


    Instructions


    1. Cook macaroni according to package directions, omitting salt and fat. Drain well and set aside. Cut sausage into 1/4 inch thick slices. Cook sausage and next 3 ingredients in oil in a large deep nonstick skillet over medium heat 8 minutes or until sausage is lightly browned and vegetables are tender, stirring occasionally. Add macaroni, tomatoes, chili powder and ground pepper; stir well. Cook, uncovered, 4 minutes or until mixture is thoroughly heated, stirring frequently. Sprinkle cheddar cheese evenly over sausage mixture and cook uncovered until cheddar softens, stirring occasionally.
