Beef: Summertime Skillet

- 3/4 cup fine bread crumbs
- 1/2 cup milk
- 1 pound ground beef
- 1 egg, slightly beaten
- 3/4 cup finely chopped onion
- 2 1/2 teaspoons salt
- 2 tablespoons butter
- 1 1/3 cups minute rice
- 1 (8 1/2 ounce) can sliced pineapple
- 1 green pepper, diced
- 1/4 cup ketchup
Instructions
- Combine bread crumbs, milk, beef, 1/4 cup onion and 1 1/2 teaspoon salt. Gently form 20 meatballs. Brown the meatballs in butter in large skillet.
- Add rice and remaining onions stir gently until rice is slightly browned. Drain pinapple, measuring syrup. Add water to syrup to make 1 3/4 cup of liquid. Cut each pineapple slice into 6 wedges
- Gradully add with the liquid and 1 teaspoon of salt and remaining ingredients to rice. Stir throughly, bring to a boil, reduce heat and cover and simmer for 5 minutes.
- Serves 4
