    Beef: Summertime Skillet

    List of Ingredients


    • 3/4 cup fine bread crumbs
    • 1/2 cup milk
    • 1 pound ground beef
    • 1 egg, slightly beaten
    • 3/4 cup finely chopped onion
    • 2 1/2 teaspoons salt
    • 2 tablespoons butter
    • 1 1/3 cups minute rice
    • 1 (8 1/2 ounce) can sliced pineapple
    • 1 green pepper, diced
    • 1/4 cup ketchup


    Instructions


    1. Combine bread crumbs, milk, beef, 1/4 cup onion and 1 1/2 teaspoon salt. Gently form 20 meatballs. Brown the meatballs in butter in large skillet.

    2. Add rice and remaining onions stir gently until rice is slightly browned. Drain pinapple, measuring syrup. Add water to syrup to make 1 3/4 cup of liquid. Cut each pineapple slice into 6 wedges

    3. Gradully add with the liquid and 1 teaspoon of salt and remaining ingredients to rice. Stir throughly, bring to a boil, reduce heat and cover and simmer for 5 minutes.

    4. Serves 4
