Rhode Island Muffins

- 1/2 cup butter
- 1 1/4 cups sugar
- 2 eggs
- 2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup milk
- 2 cups fresh blueberries
- 2 tablespoons sugar
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 375 degrees. Grease one 12 cup muffin tin, including the area between the cups. The muffins will overfill the cups during baking.
- Cream butter with sugar until light and fluffy. Beat in eggs, one at a time.
- Combine flour, salt and baking powder. Add half of the flour mixture to the butter and sugar. Add milk and remaining flour mixture and stir just enough to combine. Fold in blueberries.
- Spoon batter into prepared muffin tins, filling to tops. Sprinkle batter with 2 tablespoons of sugar mixed with 1/4 teaspoon nutmeg. Bake for 25 to 30 minutes. Cool in tins 20 to 30 minutes before removing.
