Potatoes: Buttermilk Potato Pancakes

- 2 pounds left over mashed potatoes
- 1/2 cup buttermilk
- 1 (2 ounce) package ranch dressing mix
- 3 eggs (beat well)
- 4 green onions, chopped
- 4 tablespoons butter
Instructions
- In a mixer, combine potatoes, buttermilk, ranch dressing mix, eggs and green onions. Mix well.
- Pat into 8 cakes. Cover with bread crumbs.
- Heat butter over medium heat in saute pan. Cook potato cakes until golden brown, approximately 5 minutes per side.
- Serve with sour cream and additional green onion, if desired.
