    Potatoes: Buttermilk Potato Pancakes

    List of Ingredients


    • 2 pounds left over mashed potatoes
    • 1/2 cup buttermilk
    • 1 (2 ounce) package ranch dressing mix
    • 3 eggs (beat well)
    • 4 green onions, chopped
    • 4 tablespoons butter


    Instructions


    1. In a mixer, combine potatoes, buttermilk, ranch dressing mix, eggs and green onions. Mix well.

    2. Pat into 8 cakes. Cover with bread crumbs.

    3. Heat butter over medium heat in saute pan. Cook potato cakes until golden brown, approximately 5 minutes per side.

    4. Serve with sour cream and additional green onion, if desired.
