Zucchini: Cheesy Sausage Zucchini

- 1 pound pork sausage
- 4 cups zucchini, cubed
- 1 cup fresh tomatoes, diced
- 1/2 cup white rice
- 1/4 cup onion, chopped
- 1 (8 ounce) can sliced mushrooms, drained
- 8 ounces processed cheese, cubed
- 1 pinch oregano
- Salt and pepper to taste
Instructions
- In a small sauce pan bring 1 1/2 cups water to a boil. Add the rice and simmer for about 25 minutes or until tender.
- Preheat the oven to 325 degrees.
- In a large skillet, cook the onion and sausage over medium heat until evenly browned. Drain the grease then add the zucchini and tomatoes and cook until tender. Stir in the mushrooms, rice, cheese and oregano.
- Pour into a 9x13 inch pan or a 2 quart casserole dish and bake for 1 hour or until lightly browned and bubbly.
- Serves 8
