    Potatoes: Cream Cheese Mashed Potatoes

    List of Ingredients


    • 4 pounds baking potatoes peeled and quartered
    • 1 package (8 ounce) cream cheese
    • 1 container (8 ounce) sour cream
    • 1/2 cup butter or margarine
    • 1 1/2 teaspoons salt
    • 1/2 teaspoon pepper
    • Melted butter and chopped fresh parsley (optional)


    Instructions


    1. In a large pot over high heat combine potatoes with enough water to cover.

    2. Reduce heat to medium; simmer until potatoes are tender, about 25 minutes.

    3. Drain; return to pot. Add cream cheese, sour cream, butter, salt and pepper.

    4. Mash until smooth.

    5. Serve drizzled with butter and sprinkled with parsley if desired.
