- 6 strips bacon
- 1/3 cup chopped onion
- 1/3 cup chopped bell pepper
- 1 (16 ounce) package frozen corn
- 1 large tomato, peeled and diced
- 1/2 teaspoon salt
- 1 dash pepper
- 1 teaspoon cumin
Instructions
- Fry, drain and crumble bacon. Reserve 1/4 cup drippings. Sauté onion and bell pepper in 1/4 cup bacon drippings. Add corn, tomato, salt, pepper and cumin. Cook over medium heat for about 10 minutes, stirring frequently. Sprinkle bacon pieces over top and serve.
