Potatoes: Italian Baked Potatoes And Peppers

- 2 bell peppers
- 1 pound new red potatoes
- 1 large sweet onion
- 1/4 cup olive oil
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 425 degrees. Cut the bell peppers into 2 inch pieces. Cut the potatoes into 1 inch slices or chunks. Cut the onion into chunks. Place bell peppers, potatoes and onion in a medium ovenproof dish.
- Pour oil over vegetables in dish. Stir a little. Sprinkle with salt and pepper. Bake until potatoes are tender, about 30 minutes, stirring occasionally.
