    Potatoes: Italian Baked Potatoes And Peppers

    • 2 bell peppers
    • 1 pound new red potatoes
    • 1 large sweet onion
    • 1/4 cup olive oil
    • 1 1/2 teaspoons salt
    • 1/2 teaspoon pepper


    Instructions


    1. Preheat oven to 425 degrees. Cut the bell peppers into 2 inch pieces. Cut the potatoes into 1 inch slices or chunks. Cut the onion into chunks. Place bell peppers, potatoes and onion in a medium ovenproof dish.

    2. Pour oil over vegetables in dish. Stir a little. Sprinkle with salt and pepper. Bake until potatoes are tender, about 30 minutes, stirring occasionally.
