Zucchini: Mexican Zucchini And Corn Saute

- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 1/2 cups diced zucchini
- 1 cup corn
- 1 1/2 cups salsa
- 2 tablespoons chopped fresh cilantro
Instructions
- In a large skillet, heat oil; saute onion and garlic until soft. Stir in zucchini, corn and salsa; simmer uncovered about 7 to 8 minutes or until tender. Stir in cilantro; serve hot or warm.
