    Potatoes: Mojo Potatoes

    List of Ingredients


    • 6 large Idaho baking potatoes
    • 2 cups flour
    • 1/2 teaspoon ceyenne
    • 2 teaspoons thyme
    • Salt and pepper
    • 1/2 cup milk, more or less
    • Vegetable oil, for frying


    Instructions


    1. Bake potatoes at 425 degrees for about 1 hour and 15 minutes. Cut each potato into 6 rounds, about 1/4 inch thick. Heat oil to 375 degrees.

    2. Stir flour, ceyenne and thyme together; add salt and pepper to suit taste. Dip each potato wedge into the milk and then dredge thoroughly in the seasoned flour mixture. Deep fry wedges without over crowding for about 1 1/2 minutes until crisp and golden. Drain on peper towels and serve.
