    Peas: Pea Casserole

    • 2 (10 ounce) packages frozen peas
    • 5 slices bacon, cut up
    • 1 medium onion, chopped
    • 2 tablespoons flour
    • 1 cup light cream
    • 1 (2 1/2 ounce) can mushrooms, drained


    Instructions


    1. In a saucepan, cook the peas according to package directions. Meanwhile, in a skillet cook the bacon. Remove the bacon from the skillet and drain on paper towels. Add the onions and saute in the drippings until soft. Add the flour; stir and cook for 1 to 2 minutes. Add the mushrooms and cream. Cook and stir to the consistency of a medium white sauce. Add the sauce and bacon to the hot peas. Serves 6.
