Potatoes: Potato Pancakes

List of Ingredients
- 2 1/4 pounds potatoes, peeled and cut into 1" pieces
- 1 1/2 cups grated cheddar cheese
- 1/4 cup sweet butter
- 1/4 cup sour cream
- 4 ounces bacon, cooked crisp and crumbled
- 2 green onions, chopped
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- vegetable oil
Instructions
- Boil the potatoes until tender. Drain and mash. Mix in all ingredients except the oil. Make into patties of 1/3 cup each. Dust with flour and fry in very hot oil.
