Potatoes: Roasted Garlic Potatoes

- 6 medium red potatoes, scrubbed
- 1 large sweet onion, sliced thin
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon rosemary
Instructions
- Preheat oven to 375 degrees. Spray a large baking sheet with cooking spray. Cut potatoes in 1 inch pieces and place in a large bowl.
- Add onion, garlic, olive oil and salt and mix well to coat all vegetables with oil.
- Place mixture on baking sheet, spreading out so that the potatoes and onions are in one layer.
- Bake 1 hour, turning potatoes with a spatula after about 30 minutes. Sprinkle rosemary over the potatoes during the last 10 minutes of baking.
