Potatoes: Roasted Honey Dijon Potatoes

- 1 pound potatoes, cut into 1 inch pieces
- 1 small onion, thinly sliced
- 1/4 cup dijon mustard
- 1/4 cup olive oil
- 1 teaspoon honey
- 1 tablespoon chopped parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees. Mix together mustard, honey, olive oil, salt and pepper. Mix together potatoes and onion slices. Pour sauce over vegetables and mix until well coated. Place in greased baking pan and bake for 35 to 40 minutes or until tender. sprinkle parsley over potatoes and serve.
