Tomatoes: Scalloped Tomatoes

- 4 cups chopped fresh or canned tomatoes
- 2 tablespoons minced onion
- 1 tablespoon chopped green peppers, optional
- 3 tablespoons minced celery
- 1/2 cup bread crumbs, made from soft bread
- 4 teaspoons sugar
- 1/2 teaspoon ground black pepper
- 3 tablespoons flour
- 2 tablespoons butter
Instructions
- Preheat oven to 350 degrees. Grease a baking dish.
- Combine the tomatoes, onions, green peppers and celery in a large mixing bowl.
- Mix together the flour, sugar salt and pepper. Stir the flour mixture into the tomato mixture.
- Pour into prepared baking dish and top with bread crumbs. Dot with butter and bake for 45 minutes.
- Makes 6 servings.
