    Yellow Squash: Smothered Summer Squash

    List of Ingredients


    • 6 to 8 young tender yellow summer squash
    • 1 medium onion, sliced thinly
    • 4 tablespoons butter
    • 1/2 to 3/4 cup sour cream
    • Lawry's seasoning salt
    • Parmesan cheese
    • 4 to 6 slices bacon, cooked and crumbled


    Instructions


    1. Slice squash in 1/4 inch slices. Slice onions in 1/8 inch slices. Melt butter in large sauté pan or medium Frying pan. Season squash and onions with Lawry's seasoning salt and cook together in the butter until squash are soft and the onions are soft and slightly caramelized. Remove from heat and pour off all the liquid from the pan and immediately stir in the sour cream and mix well sprinkle the crumbled bacon on that, then cover the top of the mixture with a good coating of parmesan cheese. Cover the pan with a lid and let set for about 5 minutes on a warm burner without stirring so the parmesan melts Serve hot from the pan.
