    Zucchini: Zucchini Lasagna

    List of Ingredients


    • 1 pound lean ground beef
    • 1 medium onion, finely chopped
    • 2 garlic cloves, minced
    • 1 (15 ounce) can tomato sauce or homemade sauce
    • 1 teaspoon salt
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried marjoram
    • 1 1/2 cups cottage cheese or ricotta cheese
    • 1/2 cup freshly grated parmesan cheese
    • 1 egg, slightly beaten
    • 4 medium zucchini
    • 1 cup shredded mozzarella cheese


    Instructions


    1. Brown the beef with onions and garlic until beef is no longer pink; drain off fat. stir in tomato sauce and herbs, simmer uncovered 10 minutes.

    2. Combine cottage cheese with half the parmesan and the egg until well blended, set aside. wash zucchini and slice lengthwise into 1/8 inch thick slices.

    3. Grease a 13x9 inch baking dish, use half the zucchini to cover the bottom of the dish, top with half the cottage cheese mixture and half the meat sauce, top with remaining zucchini, repeat layering, sprinkle top with mozzarella and remaining parmesan, bake uncovered at 350 for 1 hour. Let stand 10 to 15 minutes before slicing.

    4. Serves 6
