    This makes alot of chili.


    List of Ingredients


    • 4 sweet red bell peppers or 2 red and 2 yellow, diced
    • 2 large sweet onions, such as vidalia, diced
    • 4 cloves garlic, minced
    • 2 tablespoons olive oil
    • 1 (15 ounce) can vegetable broth
    • 2 (28 ounce) cans crushed tomatoes
    • 2 (15 ounce) cans black beans, rinsed and drained
    • 2 (15 ounce) cans kidney beans, rinsed and drained
    • 1 (15 ounce) can fat free spicey refried beans
    • Chili powder to taste (1 use 3 tablespoons)
    • Salt and pepper to taste


    Instructions


    1. In a stockpot or dutch oven, heat oil and add onions, garlic and peppers. Stir until soft and onions are translucent.
    2. Add remaining ingredients and bring to a low boil, stirring contantly.
    3. Add chili powder gradually until desired heat is achieved.
    4. Remove from heat and serve
    5. If desired, top each serving with cheddar cheese and fresh diced onions.
    6. Tastes better the second day and freezes well.
    7. Variation: Add minced chipotle pepper or dried chipotle powder for a smokey flavor.
