Apple Glazed Carrots

- I tablespoon butter
- 1 pound baby carrots
- 1 cup apple cider or apple juice
- 1 teaspoon honey
- 1 teaspoon green onion, minced
Instructions
- Melt butter in a nonstick skillet over medium heat.
- Add carrots and saute until carrots begin to brown slightly, about 8 minutes.
- Add apple juice and honey and bring to a boil.
- Reduce heat and simmer until carrots are tender and liquid is reduced to a glaze, stirring occasionally, about 15 minutes.
- Transfer to a bowl, sprinkle with green onion tops and serve.
- Makes 4 servings at 105 calories each.
