List of Ingredients
- 1 10-ounce package frozen, chopped broccoli, thawed
- Vegetable cooking spray
- 1 1/2 cups thinly sliced carrots
- 1/2 cup chopped onion
- 1 cup seasoned croutons
- 1/4 cup skim milk
- 1/4 teaspoon pepper
- 1 8-ounce can no salt added cream style corn
- 1/4 cup egg beaters
- 3 tablespoons parmesan cheese
Instructions
- Place broccoli on paper towels; drain.
- Coat a nonstick skillet with cooking spray; place over medium high heat until hot. Add carrot and onion; saute 5 minutes.
- Remove from heat, stir in broccoli, croutons and next 4 ingredients. Spoon into a 1 1/2 quart casserole coated with cooking spray; sprinkle with cheese.
- Bake, uncovered at 350 degrees for 35 minutes.
- Makes 5 1 cup servings, 146 calories per serving.
