    List of Ingredients


    • 1 10-ounce package frozen, chopped broccoli, thawed
    • Vegetable cooking spray
    • 1 1/2 cups thinly sliced carrots
    • 1/2 cup chopped onion
    • 1 cup seasoned croutons
    • 1/4 cup skim milk
    • 1/4 teaspoon pepper
    • 1 8-ounce can no salt added cream style corn
    • 1/4 cup egg beaters
    • 3 tablespoons parmesan cheese


    Instructions


    1. Place broccoli on paper towels; drain.
    2. Coat a nonstick skillet with cooking spray; place over medium high heat until hot. Add carrot and onion; saute 5 minutes.
    3. Remove from heat, stir in broccoli, croutons and next 4 ingredients. Spoon into a 1 1/2 quart casserole coated with cooking spray; sprinkle with cheese.
    4. Bake, uncovered at 350 degrees for 35 minutes.
    5. Makes 5 1 cup servings, 146 calories per serving.
